Spicy Eggplant Mini Pizzas with Artichokes and Blue Cheese

Ingredients

  • 2 eggplants cut into 1/4-inch-thick slices
  • 1 cup marinara sauce
  • 200 grams blue cheese
  • 1 6oz jar marinated artichokes
  • 3 tbsp chopped spicy red chili peppers peperoncini piccanti
  • 1 tsp dried oregano

Instructions

  • Preheat broiler to high. Spray 2 baking sheets with cooking spray and arrange eggplant slices on each sheet. Lightly mist the tops of the eggplant slices with cooking spray and sprinkle with salt and pepper. Place first cooking sheet under the broiler and broil the eggplant slices for 3 minutes per side, or until eggplant is golden brown.
  • Top each broiled eggplant slice with marinara sauce, dried oregano, spicy red chili peppers, blue cheese and artichokes and return them to the oven. Broil on high for an additional 2 to 3 minutes, or until the cheese is melted. Watch carefully to avoid over cooking.
  • Remove from oven. Repeat with remaining sheet of eggplant slices and pizza toppings.
